Greek Lemon Potato Recipe


Yellow or White potatoes Broth Oil Garlic Lemon zest Lemon juice Dried Oregano Salt & Pepper to taste

Instructions: Preheat oven to 400 F. Wash, peel, and cut potatoes into wedges. Add them to a baking tray, pour a generous amount of oil on top. Grate lemon peel and garlic to your desired amount (I usually use about 2-3 cloves of garlic) onto the potatoes. Add juice of 1 lemon. Season potatoes with dried oregano, salt, and pepper. You can add your favourite blended seasonings such as lemon pepper/ lemon & herbs/ Greek. Mix the potatoes so they are all coated in the seasoned oil. Pour in vegetable broth on the edge until the potatoes are about 2/3 submerged. Place in heated oven and bake for 45-75min; depending on the amount of potatoes & broth used. Bake until you see most of the liquid has been absorbed and potatoes are nice and soft. Using a spoon baste the cooked potatoes in any liquid left in the pan.
